Ingredients
  

Broth
  • 4 cups chicken stock low sodium
  • 3 tbsp white miso paste
  • 1 tbsp soy sauce
  • 2 tsp chili paste adjust to taste
  • 1 thumb-sized ginger sliced
  • 3 garlic cloves minced
Noodles
  • 200g fresh ramen noodles
Toppings
  • 2 soft-boiled eggs halved
  • 1 cup bean sprouts
  • 2 green onions sliced
  • 1 sheet nori cut into strips
  • 1 tbsp sesame oil

Method
 

  1. In a large pot, combine chicken stock, miso paste, soy sauce, chili paste, ginger, and garlic. Bring to a simmer over medium heat for 15 minutes.
  2. In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
  3. Divide the noodles into bowls. Pour the hot broth over the noodles. Top with soft-boiled eggs, bean sprouts, green onions, nori strips, and a drizzle of sesame oil.
